Slow Cooker Teriyaki Chicken with Pineapple

Ingredients
- 1 large bell pepper, cut into 1-inch pieces
- 6 boneless skinless chicken thighs, cut into 2-inch pieces
- 1 (20 oz) can pineapple tidbits, drained with 1/4 cup juice reserved
- 1 tbsp cornstarch, plus more if needed for thickening
- 1/2 cup bottled teriyaki sauce, divided
- Cooked rice, for serving (optional)
- Sliced green onions and sesame seeds, for garnish (optional)
Cooking Steps
- Coat the inside of a 3- to 4-quart slow cooker with nonstick cooking spray.
- Whisk the cornstarch, 1/4 cup teriyaki sauce, and reserved 1/4 cup pineapple juice together in a small bowl.
- Layer the bell pepper, chicken, and 1 cup pineapple tidbits in the slow cooker, then pour the sauce mixture over the top.
- Cover and cook on low for 3–4 hours, until the chicken reaches 165°F and is cooked through.
- About 30 minutes before serving, add the remaining pineapple and remaining 1/4 cup teriyaki sauce. If the sauce needs thickening, whisk an additional tablespoon of cornstarch into the teriyaki sauce before adding it and cook with the lid off until thickened.
- Serve warm over rice if desired and garnish with green onions and sesame seeds.
