Slow Cooker Pulled Chicken Tacos

Ingredients
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp oregano
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 onion
- 1 whole chicken
- 1 lime
- Whole-grain corn tortillas, for serving
- Sliced red cabbage, for serving
- Sour cream, for serving
- Cilantro, for serving
Cooking Steps
- Combine the chili powder, cumin, oregano, salt, and pepper in a small bowl.
- Place the onion in the bottom of a slow cooker.
- Remove any giblets from the chicken.
- Rub the spice mixture over the outside of the chicken.
- Place the chicken breast-side down on top of the onion. Do not add liquid.
- Cover and cook on high for 4 hours or on low for 7 hours, until the chicken is falling off the bone.
- Transfer the chicken to a work surface and remove the edible meat from the bones.
- Shred the chicken with two forks.
- Add a few spoonfuls of the cooking liquid and the lime juice.
- Serve with tortillas, red cabbage, sour cream, and cilantro.
