Sloppy Joes with Sweet Potato Purée

Ingredients
- 1 tbsp olive oil
- 1/2 cup red onion, diced
- 1/2 cup celery, diced
- 2 cloves garlic, minced
- 1 lb ground turkey
- 1/2 cup sweet potato purée
- 1/2 cup butternut squash purée
- 1/2 cup chopped carrots
- 1/2 cup beef broth
- 1/4 cup tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp chili powder
- 1/2 tsp salt
- 1/8 tsp black pepper
- Hamburger buns
Cooking Steps
- Coat a large nonstick skillet with cooking spray and heat over medium-high.
- Add the olive oil, onion, celery, and garlic.
- Cook for 3–4 minutes, until the onion starts to soften without browning.
- Add the ground turkey and break it up with a wooden spoon.
- Cook for 4–5 minutes, until no longer pink.
- Add the sweet potato purée, butternut squash purée, carrots, beef broth, tomato paste, Worcestershire sauce, chili powder, salt, and pepper.
- Reduce heat to low, cover, and simmer for 15–20 minutes, until the liquid is reduced by about half.
- Serve over buns.
