Cheddar & Gruyère Mac and Cheese with Polish Kielbasa

  • 2 tbsp Butter
  • 1 tbsp Flour
  • 1 1/2 cups Milk
  • 2 cups Cheddar cheese
  • 2 cups Gruyère cheese
  • 1 lb Pasta
  • 5 oz Polish kielbasa
Cooking Steps
  1. Preheat the oven to 375°F.
  2. Cook the pasta in a large pot of salted water for 3-4 minutes less than the package directions. Drain, reserving 1/4 cup of the pasta cooking water.
  3. While the pasta cooks, melt the butter in a small saucepan over medium heat. Whisk in the flour and continue cooking for 2-3 minutes while stirring constantly. Add the milk and continue stirring.
  4. Cook the sauce for about 5 minutes until it gradually thickens, whisking constantly to prevent lumps.
  5. Remove the sauce from the heat and stir in the cheddar and Gruyère cheeses, reserving a combined 1/4 cup of cheese. Whisk until the sauce is smooth and the cheese has completely melted.
  6. Return the drained pasta to the cooking pot. Add the reserved pasta water and cheese sauce, gently tossing to coat. The mixture should be quite runny.
  7. Mix in the sliced kielbasa and transfer everything to a deep baking dish. Sprinkle the reserved 1/4 cup of cheese over the top.
  8. Bake for 30 minutes until hot and lightly golden. If the top is still pale, switch the oven to broil for 2-3 minutes until browned.
