Cheddar & Gruyère Mac and Cheese with Polish Kielbasa

- 2 tbsp Butter
- 1 tbsp Flour
- 1 1/2 cups Milk
- 2 cups Cheddar cheese
- 2 cups Gruyère cheese
- 1 lb Pasta
- 5 oz Polish kielbasa
Cooking Steps
- Preheat the oven to 375°F.
- Cook the pasta in a large pot of salted water for 3-4 minutes less than the package directions. Drain, reserving 1/4 cup of the pasta cooking water.
- While the pasta cooks, melt the butter in a small saucepan over medium heat. Whisk in the flour and continue cooking for 2-3 minutes while stirring constantly. Add the milk and continue stirring.
- Cook the sauce for about 5 minutes until it gradually thickens, whisking constantly to prevent lumps.
- Remove the sauce from the heat and stir in the cheddar and Gruyère cheeses, reserving a combined 1/4 cup of cheese. Whisk until the sauce is smooth and the cheese has completely melted.
- Return the drained pasta to the cooking pot. Add the reserved pasta water and cheese sauce, gently tossing to coat. The mixture should be quite runny.
- Mix in the sliced kielbasa and transfer everything to a deep baking dish. Sprinkle the reserved 1/4 cup of cheese over the top.
- Bake for 30 minutes until hot and lightly golden. If the top is still pale, switch the oven to broil for 2-3 minutes until browned.
