Ingredients
- 1 pound thin boneless pork chops
- Wheat flour, enough to coat
- 3 1/2 tablespoons butter, divided
- 1 apple, cored and cut into large dice
- 1/2 cup apple juice
- 1/2 cup water
- 1 handful fresh sage leaves, sliced
- 1/4 cup heavy cream
- Salt and black pepper
Cooking Steps
- Season the pork chops with salt and pepper, then coat all sides lightly with flour.
- Melt 3 tablespoons butter in a large skillet over medium heat. Add the pork chops and apple. Cook until the chops are golden and cooked through, about 2–3 minutes per side. Move the pork to a plate.
- Keep the skillet over medium heat. Add the apple juice and water to the apples. Boil, stirring, until the liquid is reduced by half, about 5 minutes.
- In a small skillet, melt the remaining 1/2 tablespoon butter over medium heat. Add sage and cook until the butter just begins to brown. Remove immediately from the heat.
- Stir the cream into the apple mixture. Return the pork chops to the skillet to reheat and coat with sauce.
- Top with the crispy sage and serve.
